This sheng-style aged white tea comes to us from Fujian Province in eastern China, the home of China's famous white teas. Made from the Zhenghe Da Bai cultivar and harvested in 2012, this aged white tea is ready to drink or keep.

White teas are typically made from either the Fuding Da Bai or Zhenghe Da Bai cultivars. Having more body than the Fuding Da Bai cultivar (prized for its large buds), the Zhenghe Da Bai cultivar allows for better and more interesting maturation of the leaves. As aged teas continue to gain in popularity outside Yunnan, it is interesting to observe the evolving expertise and artistry among tea craftsmen. Our 2012 Bai Mu Dan was produced by Yang Mao Wang, and we are delighted by his processing of the leaves and attention to detail.

Expect a refreshing and delicate cup typical of white teas, but with the distinct flavors of its age: stewed fall fruits and toasted wood. 

Note: This 200g cake contains 40 first-steep portions of tea, each of which will yield 10-12 beautifully evolving resteeps.

Brew 5 grams of tea in 16 ounces of 185° F water for 3 minutes. Resteep 3-5 times at increasing time intervals.

A trained chef, Hayley's vision for Saratoga Tea & Honey Co. has been her entire lifetime in the making. Though she was still drinking espresso at the time, the Tea & Honey seeds were planted in the kitchens of Michelin-starred restaurants with training and appreciation for food and beverage as not just sustenance, but experience and hospitality. Her time spent as a chef-instructor at Jacques Pépin's French Culinary Institute introduced her first to matcha (and its ability to enhance sustained and steady focus), then to the subtleties of single-origin traditional teas like high mountain Taiwanese oolong. As a celebrated and awarded taster and master of culinary arts, in 2015 Hayley opened the doors to Saratoga Tea & Honey Co. Since then, she has cultivated a communi·tea for discovering rare and exciting teas, extraordinary raw honeys & unique gifts produced by small farmers and artisans from around the world.
